Ingredients

1 kg fresh spinach (washed and chopped)

1 bunch spring onions (chopped)

1 small leek (optional, finely sliced)

200–250g feta cheese (crumbled)

2 eggs (lightly beaten)

Salt & pepper to taste

Extra virgin Olive oil (for sautéing and brushing)

1 pack of filo pastry (thin sheets)
Instructions

Sauté onions, leek, and spinach in olive oil until soft and moisture evaporates. Let cool.

Add dill, feta, eggs, salt, and pepper. Mix gently.

Brush a baking tray with olive oil. Layer 4–5 filo sheets, brushing each with oil.

Spread the filling evenly. Cover with 4–5 more filo sheets, again brushing each.

Tuck in edges, score the top lightly, and bake at 180°C (350°F) for 45–50 minutes until golden.

Let it rest for 10 minutes before serving.
Notes:
A Tip from my Greek yiayia: she always adds a little rice
to the filling because it helps absorb the moisture
from the feta cheese
and keeps the pie perfectly balanced and delicious! ![]()
